Happy Monday! It has been a while since we’ve talked, now hasn’t it? I guess I had better get you all caught up on my weekend. But first let’s start with this morning. I ventured out for a rather dark but nice & breezy run.
Since we lost an hour over the weekend it felt super early when I woke up for my run. I turned on my Pandora radio and set out for a little jaunt. It was dark but peaceful and quiet…great time to clear my head and collect my thoughts. 7 miles for breakfast in just under 57:30, 8:12 pace. Not so bad for a Monday morning. Perfect tempo run (for me).
It may also help that I just got some new shoes courtesy of Luke’s Locker. The Nike Free Run 2s. They are pretty awesome. I love how flexible they are, and I feel all footlose and fancy free when I run in them.
This weekend I coached my running group over at Luke’s Locker. It was our last long run before the Rock N Roll Dallas half marathon in 2 weeks. 13 miles plus some hill repeats. Of course we had to take a group photo at the end. I am so proud of them, like proud mama kind of proud. They have all made some great strides in their training and are ready to knock it out of the park. It should be lots of fun – I will be running it as well. I am hoping for a sweet PR for myself and for all of my lovely participants.
Since it rained a majority of the weekend (thankfully the rain held off for our Saturday morning long run) I didn’t do much. Went to Danceaton class, learned some new choreography, came home. It felt nice to veg out and just kind of do nothing. Oh…and since Friday was payday – you know payday in my little world equals
saving money signing up for yet another race. So, this happened…
And then this…
I ran both races last year – The Central Market Thrill of the Grill 5K, then PR’d at the Heels and Hills 10K..so I decided this year I would go for the gusto and run the Heels & Hills half instead. I love the Thrill of the Grill race because there is breakfast afterwards…plus it benefits the Plano Independent School District, where my mom works as a 1st grade teacher. She ran/walked the 5K last year…her first 5K ever. So proud of her! So we will be doing the race again too.
Sunday was real chill…I made myself some steak & veggies for dinner. NY Strip, seared and then popped it in the oven. Then I felt like making cookies. Not sure what got into me. So I made white chocolate peanut butter cookies from scratch. Eric doesn’t eat peanut butter (lame) so I brought them to work today to share. Want the recipe? Here you go:

I substituted the peanut butter for all natural white chocolate peanut butter, then used I Can’t Believe It’s Not Butter instead of real butter.
Everything else stayed the same. The white chocolate pb was a nice touch and made them real chewy.
