Girl on the Go Meals – Stuffed Zucchini.

Happy Thursday! I have a girl on the go meal to share with you today. I’m on a vegetarian kick this week…if you have been reading a while you know that I tend to do this from time to time and right now I’m only eating veggies, seafood and eggs. I just cannot cut out my seafood. I love it too much!
Anyway I’ve concocted a veggie mexican style recipe that uses one of my favorites….zucchini! Hope you enjoy.
What you’ll need-
1-2 whole zucchinis
1 can refried vegetarian or black beans (I used Amy’s Organic brand)
1/2 cup cooked corn
Crumbled feta or blue cheese/avocado, to taste
Garlic salt/red pepper to taste
-Cut the zucchini in half and scoop out what’s inside until you make you make a hollow shell (it’s fun to eat the inside of the zucchini as you’re doing it – that is, if you’re cooking for one!)
-In a separate bowl, mix the beans with the corn, season lightly with garlic salt/red pepper or whatever seasoning you like
-Fill the shell with the bean mix, and top with crumbled cheese.
-Bake in the oven on 350 for 15 minutes until cheese is melted and it’s cooked through.
-Top with avocado and more red pepper if you like it zesty!

  1. Those look amazing! I love avocado and would/could eat it almost daily. I am a huge fan of loaded sweet potatoes – avocado, greek yogurt, salsa, black beans and whatever else I have handy (could be leftover chicken, tuna, other veggies, anything). Looks (and sounds) weird, but so tasty and filling.
