16 Miles, Big Tex and Football Eats…Wknd Recap.

I woke up to some lovely chilly temps this morning…and it looks like it will be like this all week long. Time to bust out the boots and scarves!

Early this morning I wiped the sleepies from my eyes and taught my a.m. cycle class. We pushed through and got it done.
Sprints to this track definitely woke us up. I love my Monday morning group because they always show up ready to bust it out and work.
This weekend was jam packed with fun! Friday I had a half day at work and went straight to the spa for a pedicure. My tootsies really needed some TLC. Hot towels, rubdown, foot scrub…I got the works.
The rest of the day was chill and I actually went home and relaxed out a bit. Much needed in preparation for the busy weekend ahead.
Saturday morning I was up early with my running group for some easy long miles. It felt good to ramp it back up.
I was thinking it would be cooler out but it was another icky humid day. We did have a bit of a temperature drop at the end so that felt nice.

Two packets of Gu for this run and my friend Jackie gave me some peanut butter Gu to try. I love this flavor!
It was a little thick but tasty. No caffeine but it had the right amount of sweetness to give me a boost at the end of my run.
After the run and getting cleaned up I did some chores around the house and Eric drove up from Houston to visit. We met up with my friend Natalie and her roommate and made it out to the State Fair to say hello to Big Tex.
Unfortunately we got rained out and it was super cold and windy that night but I still managed to grab a few shots.

Sunday E and I went to the Denver Broncos vs. Dallas Cowboys game! I had never been to a real NFL game so this was lots of fun. E is a HUGE Broncos fan so this was basically his dream. Please believe a lot of trash talking went down but it was all in good fun.

I’m so glad the Broncos won because I would not have heard the end of it.
I am still on this veggie kick so I also made some vegetarian buffalo ‘chicken’ dip with light cream cheese and it was delish. I did not miss the chicky at all.
How was your weekend? Did anyone get a long run in? What are your favorite eats on football Sunday?

  1. That dip sounds so yummy! I think I’ll be making that in the near future. Thanks for the recipe. 🙂 Way to go with your long run… I feel so far removed from distance running right now. I am living through your updates and training right now. 🙂

  2. My friend was the voice of Big Tex for years and years and years till it burned down and then they unceremoniously fired him. How was the new voice? I’m hoping it was crappy sounding, haha!
