Miles on the ‘Mill and Just Too Good.

This morning I slept in until about 7:15 am (yes, living on the edge) and debated on moving my workout to this afternoon since it was rainy, humid and gloomy out…but then I read a little motivation a la Pinterest that I believe truly got me up and running.

I had my apartment gym all to myself. It was lovely. I hit the weights and got some miles in on the ‘mill.

So some of you wanted the recipe to my pumpkin shells I posted yesterday. Well here it is…super easy to make and you will have plenty of leftovers for dinner the next day.
What you’ll need:
2 cups Quinoa pasta shells (or just regular ones) I used the Ancient Harvest brand
Ancient-Harvest-Quinoa-Pasta-Shells-Gluten-Free-089125270000
1/2 c pumpkin puree
1/2 c crumbled blue or gorgonzola cheese
3 handfuls of fresh spinach
2 wedges of light swiss Laughing Cow cheese
Panko bread crumbs/light butter/garlic salt/red pepper flakes, to taste
Cook your pasta, drain. Place pasta in small square pan, mix in light butter (I used I Can’t Believe It’s Not Butter) dash of garlic salt, cheeses. Mix in spinach and pumpkin. Top with panko bread crumbs. Bake in oven at 375 for 15-20 minutes until browned. Crank up the oven on broil for 5 minutes til the top gets crispy. Take out of the oven. Cool then serve.

This dish will definitely be making a repeat appearance. It was just too good.
