I think part of the reason why I love morning workouts is that I get to come home, let my hair down, and unwind by cooking or watching one of my favorite shows. Although baking from scratch is not exactly my forte (I kind of wish it was so I could bake you all delicious goodies)…cooking definitely is. I find it to be so therapeutic!
Last night I made this vegetarian taco soup. You can also make it with turkey or any meat of your choice! It’s delicious, filling, and perfect for a chilly night.
Here’s what you’ll need-
-Veggie crumbles, ground turkey, or meat of your choice
-Red pepper flakes, chopped or roasted garlic, salt/pepper to taste
-Avocado/shredded cheese to taste
-Brown and season your meat. Stir in the beans, corn, diced tomatoes, onion, and cilantro. Cook on medium for 15-20 minutes. Simmer until it’s ready to serve!
