Easy Weeknight Dinners – Lime Cilantro Salmon.

This is probably one of the easiest meals I make all week. My days are long – typically they start out with an early morning run, followed by 8 hours of work…and Weds and Thurs nights I teach spin classes. I’m as busy as a bee but I wouldn’t have it any other way! Keeps things interesting.
So when you’re a working girl you have to cut corners a bit and find fast and healthy meals that you can make on the regular! Salmon is a staple I have to have around in the kitchen. Typically I buy the big bags of wild caught salmon or tilapia to have them handy.
I got creative last week and came up with this lime cilantro salmon. 
Here’s what you need:
Wild caught salmon
1 bunch of fresh cilantro
1-2 tbsps. extra virgin olive oil
Few dashes of garlic salt
Low sodium montreal steak seasoning (trust me on this one)
Preheat oven to 400. Season your salmon with olive oil, garlic, steak seasoning (just a couple shakes of the steak seasoning will do). Squeeze fresh lime on top, you can never have enough lime so squeeze liberally. Cut the lime up and put fresh slices on top of the fish. Top with cilantro.
Bake in the oven for 20-25 minutes until it’s all the way cooked through.
Serve with your favorite vegetable and enjoy!

  1. That looks fantastic! My favorite super easy but healthy meal is tacos made with rotisserie chicken. I think almost every supermarket has ready-to-go rotisserie chicken these days and you can pick up veggies and fixins to make healthy tacos or even a taco salad.

  2. Montreal steak seasoning, huh? I’m gonna have to try that. My quick go-to sauce for salmon is chopped up tomatoes and kalamata olives sauteed in olive oil, garlic, mustard, braggs liquid aminos, red wine vinegar and sriracha. It’s so easy and makes a quick dinner seem like you put a lot more effort into it.
