I have been a spaghetti squash making fool lately. I love roasting it in the oven while I watch my shows, then about 35 minutes later I have a tasty, filling meal. This week it has been my version of alfredo with broccoli. It probably tops the tilapia dish as far as being the easiest thing you will ever make! I already want more. You can add shrimp or any kind of protein as well and I’m sure it would be delicious!
Here’s what you need-
1 medium spaghetti squash
Broccoli florets or your favorite veggie (I buy them in the steam-able frozen bags)
1-2 wedges of laughing cow light cheese
Feta or crumbled cheese
1 tbsp I Can’t Believe It’s Not Butter
Dash of garlic powder, salt/pepper to taste
Cut squash in half, take the seeds out and place in oven. Bake on 350 for 35-40 minutes. Once the squash is cooked, take it out and use a fork to to scrape squash out in spaghetti strands. I used the hollow squash as my ‘bowl’ for my noodles. Mix in butter, laughing cow cheese, and broccoli. Sprinkle w/ garlic, salt/pepper and top with crumbled cheese. Half of a squash is plenty! I ate it 2 days in a row.
