Friday Eve and Shrimp Tacos.

Happy Friday Eve! The weekend is so close I can taste it.

Yet another 4 miles this morning enjoying the cool breeze before the storm rolled on through. Texas storms in the spring time are funny because they will do a drive by and then be gone in an instant. Then the sun is out and ready to play.

So since I’ve decided today is Taco Thursday, I have a quick recipe for you. Shrimp tacos…probably my favorite way to eat shrimp would be between some corn tortillas. Good stuff.

Here’s what you need:

Corn tortillas
Shrimp, peeled and cooked
Shredded lettuce/tomatoes/your favorite veggies
Laughing cow light cheese
Avocado
Salsa
Minced garlic, salt/pepper to taste

Sauté shrimp on the stove on medium heat with garlic, salt/pepper, and laughing cow cheese until cooked through. Set aside and warm corn tortillas in the microwave. Place cooked shrimp on tortilla shells and top with your veggies, salsa and avocado.

There you have it! Serve with quinoa or your favorite side dish.

  1. Oh my heck, those shrimp tacos sound AMAZING!!! We are going grocery shopping this weekend. I think that will be on the menu for next week. We usually do chicken or shredded beef tacos at our house, just cause the kids will eat it. My boyfriend and I will mix lots of veggies in (green & red bell peppers, spinach, avocado) and we top it with cheese & sour cream! Yum!!!

  2. Ooo, I love tacos!! Great recipe by the way!! 😉 My favorite tacos are ones with lots of cheese, guacamole, and salsa!! I love an assortment of peppers with jalapenos!! Great job on your run, too!!

  3. Girrrrl. Those tacos! I think we have been eating very similar, I’ve just been the omelet version of your tacos! Never in my life did I think shrimp, avocado, and eggs go together. But it’s life changing.

    Congrats on your 4 mile run, and are those NOVA running shoes?! I’ve been wanting to purchase a pair for trails but I am scared to feel to high off the ground haha!

    • They’re Hokas. Try them…you might like them! I don’t think they’re for everyone though TBH. Have never raced in them (I race in Asics) but they’re great on the roads to reduce impact on your joints.
