Downpour and a Recipe.

7 miles in the rain this morning. It was nice and clear from jump but then I was running in a straight up downpour on the way home. I got a nice little shot of the clouds before all of that happened though.

Looks like the rain will be staying around for a while…thank you mother nature for the somewhat cooler weather.

So today I figured I’d share a recipe with you for goat cheese turkey stuffed peppers…it has been a while since I’ve done that! I made this one for dinner this week then had plenty of leftovers since I made a few peppers. I am scoring all of the fresh delicious veggies at the local farmers market.

And you know I had to add goat cheese…just because.

What you’ll need:

Green bell peppers (of whatever you favorite color is), cut in half, seeds out
Extra lean ground turkey
Cooked quinoa
Taco seasoning (preferably low sodium)
Sriracha
Garlic powder
Goat cheese/avocado to taste

Brown ground turkey and add in taco seasoning. Once cooked all the way through add in sriracha and garlic. Cook on medium low for 5-10 minutes. Mix meat and cooked quinoa together and spoon it into the halves of bell peppers. Top with goat cheese. Cook in oven on 375 for 15 minutes. Serve.
