Pretty Blooms and Breakfast for Dinner.

7 miles started my morning running along some pretty blooms. These sunflowers are popping up everywhere.

It was at an easy relaxed pace but definitely just what I needed. Lately I’ve been feeling the need to slow down my MIND a little bit and take some time to just reflect and really focus on me. I’ve also been spreading myself pretty thin with work and teaching about a million classes a week (well about 4-5 spin classes along with my full time career)…it’s nice to make a little extra money and help people out but thankfully next week my schedule goes back to normal so I’m really looking forward to an easier work load.

Speaking of easy…l have a fairly easy dinner recipe for you today. Who loves breakfast for dinner? That would definitely be me. This one was super good and satisfying. I ate it while I caught up on all of my shows.

What you’ll need-

2 eggs, preferably cage free/organic
Garlic salt/red pepper flakes, to taste

Preheat oven to 400. Cut avocado in half and take the seed out. Scoop out a little hole in each avocado half to make space for the eggs. Carefully crack 1 egg in each avocado. Bake at 400 for 20-25 minutes until cooked through. Sprinkle with garlic and red pepper flakes. Enjoy!

  2. My apologies, I stopped reading and simply took in everything I could from your lovely photo of the sunflowers 🙂
    Oh and the avocado thing is awesome! I go through a handful of them prepared like that in a week.

  3. I’ve always wanted to try eggs/avocado this way but I’ve only ever had my eggs scrambled or in the form of an omelet. So this would be a leap for me in the egg-world. But it’s beautiful! And it looks like it would keep me full for hours which is tricky haha

  4. For some reason pretty bits of nature like sunflowers along the run makes it SO much better. 7 miles with those kind of views in more than bearable! You do so much in a week (or a day for that matter!) I’ve been lounging around enjoying summer, so take a break to relax! I’m living the lifestyle of a grandma, and I highly recommend it for an hour or two 🙂 xx

  5. I’m glad you’re going to get a break soon. Overextending yoruself is always hard, even if it is just for a little while. One of the things I love about running is that you get to see the changing of the seasons, including all of the new flowers every couple of weeks. 🙂

  6. Avocado and eggs are proof that God wants us to be happy. Every time I eat that combo I just get filled with joy. Plus all the healthy fats quiet my inner fat girl. I could eat that every day!
