10 Miles and Eggplant Pizza.

10 miles this morning chasing the sunrise and sorting out my thoughts. 10.10 miles to be exact. What can I say, I like running symmetry.

It always feels good to start Thursday with some nice mileage. Not sure why but Thursdays are one of my favorite days of the week. Probably because I teach my last spin class of the week tonight. And then I have a sushi date afterwards so that’s always a reason to celebrate.

Speaking of yummy eats, I told you I’d share this easy recipe with you earlier in the week. Eggplant pizzas are super easy to make if you’re a girl on the go like myself. Plus they’re in season so they are everywhere! I made these with some ingredients I got from Sprouts. But they are so versatile you can put veggies, pepperoni, or whatever your favorite pizza topping is!

Here’s what I used.

1 medium sized eggplant (1 eggplant can make several pizzas)
Spinach and feta chicken sausage
1/2 c shredded jalapeño yogurt cheese
1 small can of tomato sauce
Garlic powder/salt/red pepper flakes to taste

Preheat oven to 375. Slice eggplant to make round pizza circles. Sprinkle garlic lightly on top, then spread tomato sauce on top of eggplant. Top with cheese and cooked pieces of chicken sausage. Bake in the oven for 20-25 minutes until cooked through. Then voila! Enjoy.

  1. Looks yummy thanks for the idea!!! I’m always trying to get more veggies into our diet and this is great (hopefully the kids will like it!! hmm… maybe if I get them to make their own pizzas then that would be even more fun!) Have a great day!!
