Nippy Weather and Sweet Potato Turkey Chili.

My morning started out with teaching a power packed class at the gym followed up with a little outdoor jaunt. This weather…I’m absolutely loving. It’s finally starting to get a bit nippy down in Texas. IMG_20141106_072131

Temps should for sure be good for some running this weekend!

Along with chilly weather comes warm yummy comfort food and the recipe below did not disappoint. Plus it’s packed with protein and you will have plenty to eat off of for the rest of the week!

I adopted this sweet potato turkey chili from the Skinny Taste website. Lots of great finds on there. I did tweak (aka simplify) it a bit.

What you’ll need:

1 sweet potato, peeled and cut up into chunks
Ground turkey (or soy crumbles if you’re a veggie)
Diced tomatoes/peppers (1 can of the rotel works great) & tomato sauce
Chopped garlic
Crumbled goat cheese/tortilla chips/hot sauce to taste

Brown the meat and cook through. Drain, then add the garlic and salt/pepper to taste. (I also added a bit or sriracha here for some heat…so good!) Add in peppers, corn and chopped up sweet potatoes. Cook on medium for about 20-25 minutes until potatoes are softened and everything is cooked thru. Top with crushed tortilla chips and goat cheese, serve.

  2. This week I’ve made a ham/corn chowder, chicken with rice and broccoli, salsa black bean chicken in the crock pot and a spaghetti dish. Now if only I had a plan for tonight – better get on it!!!

I love sweet potatoes and I’ve been looking for a good chili recipe to try for crockpot Tuesdays when I work and go straight to run club, so I will put this on my todo list!   4. I’m not a big fan of sweet potatos, unless it comes in the form of pie, lol. But, otherwise that sounds good. I’m sure you could easily substitute a regular potato. I’m SO excited it’s finally cold enough for soup though. I love soup!!!
