Stuffed Peppers and Dash for the Beads.

7 miles to the tune of some serious chilly wind this a.m. It was a little bit of a shock to the body with the dip in temps but it still felt good to get it in.

So it has been a while since I’ve shared a recipe with you! I have been super slammed with work, running and such but I’ve still found a little time to play in the kitchen.

Here’s what you’ll need to whip up a colorful, tasty pepper in no time!

-Bell peppers (I like the red, yellow and orange varieties. The more colors the better!)
-1 serving of cooked ground turkey, chicken sausage or soy/veggie crumbles. Whatever your favorite protein source is!
-1 cup of cooked quinoa
-1/2 an avocado
-Fresh cilantro, goat cheese crumbles, garlic
-Salt and pepper to taste

Cut peppers in half and empty out the seeds to form a hollow shell. Mix the cooked meat and quinoa together in a bowl, along with garlic, cilantro and spices. Fill up each pepper with the mix and then bake in the oven on 400 for 20-25 minutes until the pepper is softened and cooked through. Top with avocado, goat cheese and more cilantro. Serve.

Switching gears a bit…this weekend I’ve signed up for yet another FUN race! It’s *just* a 5K…but that distance is always a good tune up for me since I log so many miles from week to week. Me and a friend scored a great Groupon deal so I figured what better way to celebrate my favorite holiday with a little racing!

Of course I also have another long run to squeeze in there somewhere so this weekend will prove to be another fun adventure.

Oh and I ran this race last year! You can check out the recap here. Hopefully it will not be as crazy hilly as before…I think they have changed the course a bit.

  1. That race looks like fun, and I love stuffed peppers! YUM! 😀 And also, I know I’ve said this on just about every running recap post – but I LOVE your morning run photos! Keep ’em coming! It’s like a little ray of hope that it will be warm again in Boston someday! Haha. 🙂

  2. I need to try that recipe out. I tried out a stuffed peppers recipe and it came out a bit bland (per P) so I guess I just need to perfect it. The ingredients in your stuffed peppers sound so flavorful. I bet delicious.

    Ohhh, that looks like a fun race. I was going to do this Cupid 5k on Saturday but can you believe if you didn’t register on time it’s $50?? What in the WORLD?@$@# I just signed up for a Halloween half marathon and it cost 29.99$ as long as it’s before 2/25. I can’t wait!!! What a steal too. There aren’t too many half marathons that cost that much. Or maybe around this way. Shoot. I have to pay $266 tomorrow for NYC marathon. UGH. Shoot me now.

  3. Running the Joe Cain 5k in Mobile, AL celebrating the man who made Mardi Gras what it is today! Big block party is afterwards plus a parade a few hours later. I need to incorporate another 7 miles that morning too!
