Basking in the Sunshine and Avocado Shrimp Lettuce Wraps.

8 miles this morning basking in the sunshine. Mother nature has been really good to us the past couple of days! I hope we can keep this going.

Today I have a fun recipe for you…perhaps something you can whip up for your upcoming Cinco de Mayo fiesta!

Here’s what you’ll need.

Romaine lettuce
1 1/2 cups cooked shrimp (I like to sauté mine with garlic and hot sauce)
1 avocado, chopped
1 cup of cooked quinoa
1/2 cup fresh cilantro
A few squeezes of lime & garlic

Fill the romaine lettuce wraps with quinoa mixed with the cilantro, garlic and a squeeze of lime. Top with shrimp, chopped up avocado and top with feta or salsa (optional). Enjoy! Perhaps with a margarita.

  1. I love PF changs chicken lettuce wraps… I have a copycat recipe on my blog and they are SO good. I don’t eat shrimp, but my fiance would love these! Maybe I’ll be nice and make them for him 🙂
