Happy September to you! Hope it is starting to feel like fall where you are. I hear we are in for somewhat crisper cooler weather next week so I’m definitely counting down the days to running with my hair blowing in the wind.

Fall is just around the corner and you know what that means…all things pumpkin!! Bring.it.on. Yes I am a kid in a candy store when it comes to this stuff. Last night to celebrate I bought my first pumpkin puree of the season.
Here’s a cozy recipe you’ll definitely want to bookmark for those nights where you want to curl up on the couch with a bowl of goodness! I threw in some colorful veggies too for good measure. My turkey taco pumpkin chili.
You will need:
-Cooked lean ground turkey (or veggie crumbles if you want to keep it meatless)
-1 cup of black beans
-1 cup of corn
-Diced tomatoes or rotel
-Diced green chiles
-1/2 can of pumpkin
-1 handful of chopped green onions
-1 handful of fresh cilantro
-Garlic/taco seasoning/Mrs. Dash to taste (I like the garlic and original seasonings because they add a ton of flavor without salt!)
Cook and season your ground turkey & add the beans. Add in diced tomatoes, chiles, corn and pumpkin and cook on medium low for 10 minutes. Top with fresh cilantro and onions. Simmer for a few more minutes to let the flavors marinate! Serve with avocado and crushed tortilla chips. Oh, and what I love about this the most is that you can eat off of it for days. It’s super hearty and filling!
And maybe a skinny margarita. Just because.
