7 miles before 7 a.m. this morning with the help of my good friend Starbucks! Dark roast for the win.
I met up with a few folks from IRC and got it done. I tell you what early miles in the darkness are a lot easier with the help of a group of awesome runners! What a great crew.
Today I’ve got an easy side dish that is quick and easy to whip up! As promised…jerk sweet potatoes. Yep…I kind of made it up but they are so GOOD. I have Sprouts Farmers Market to thank for the spice.
Here’s what you need:
1-2 medium sweet potatoes, sliced into rounds or chopped up
A few dashes of extra virgin olive oil (you can also use coconut oil)
Drizzle of honey
Sprinkle of jerk seasoning (I got mine from the bulk selection at Sprouts)
Preheat your oven to 375. Slice up the sweet potatoes and drizzle oil, then sprinkle on the jerk seasoning. Drizzle the honey on top, then roast in the oven for 30-35 minutes until the potatoes are softened and cooked through.
Done and done! They’re even better as leftovers.
What’s for dinner this week?
Spaghetti squash, chicken, cucumber & tomato salad & of course sweet potatoes! Yum.
